This morning I got a surprise cup of sweet and peppery tea, accompanied by a gigantic white chocolate sheep. I assume that it has hung around the house since the Easter Egg hunt.

I ate it, or at least most of it, having decided to start with the body and leave the head until last. White chocolate has always puzzled me. Does it contain cocoa or not?

According to Wikipedia “White chocolate is a chocolate confection, pale ivory in color, made from cocoa butter, sugar, milk solids and sometimes vanilla. White chocolate does not contain cocoa solids, which are found in other types of chocolate, such as milk chocolate and dark chocolate.”

So now I know.

I will look up a number of other things that have puzzled meas the morning progresses. A research mania has swept over me. I will learn, for example, that (a) making cheese involves a process of fermentation; (b) you can make oat milk cheese; (c) you can do this at home using no special equipment.

Perhaps the merry merry month of May will turn into Homemade Cheese Month.
